Sushi making can be intimidating to some, but Chef Masa Ishizawa, from the Four Diamond restaurant Okada at the Wynn, covers all of the basics with a friendly, engaging manner that will have you mastering the art in no time.
A veteran of the restaurant industry, Ishizawa's talents first emerged in his hometown of Kyoto, Japan. After attending college in San Francisco, the chef returned to Japan to work in some of the country's finest kitchens including the Kyoto Hotel, Sciyo Zendokoro "Okumura" and Bell in Shiga where he developed and honed his classic Japanese culinary techniques. Upon returning to the United States, Chef Ishizawa had the opportunity to work with Nobu Matsuhisa and Julian Serrano, and cites both as mentors.
“ Class was very good, the Okada chef was very kind and willing to answer all the questions, free delicious sushi samples (my favorite the "cute smoke salmon ball). ”
“ Too slow..too hard to see...too hard to hear so I left early. Most food demonstrations have an overhead mirror to see what the chef is doing. Hand outs of materials are heplful and absent here. ”
“ The format is meant to be intimate and doesn't work for late comers. It's a class! Would you show up late to a class you paid big bucks for? I suspect latecomers would reduce drastically if we were paying the chefs what they're worth for their time. My boyfriend and I have attended this series faithfully and we love it. We've never seen it as full as last night. The problem was not seating, the problem was not lack of a mirror, nor missing handouts (take notes if you truly want to learn!) - there were simply too many people who jumped in at the 11th hour.
The opportunity to gain up close and personal instruction and interaction with these world class chefs can't be beat. Please respect the small size format. I honestly think once seats are full - they should "close" the class. ”
“ Joe, Thanks for letting us in on this event. How gracious were the chefs and whole foods in accommodating the masses instruction, not to mention free sushi! Learned all I needed to know plain and simple as the title suggested. There were audio and visual challenges, but got answer later to a question I could not hear. Considering all the late drop ins and non-Meet-Up attendees to account for, maybe a "rope-off" and a sign-in sheet would help. ”
“ Just as the title suggested, the chef (great personality) walked everyone through making some simple sushi at home. After the demo, we even tasted samples of the items that were made! Only thing that could be improved is the seating situation. ”
